The Herbal Apothecary of Winter & Spring – 5 Week Course
Awakening with Herbs: Body, Mind & Season
Step into the world of herbs and the gentle unfolding of the season — a five-week journey crafted for the passage from winter’s quiet into the first stirrings of spring. A time to nurture and strengthen both body and mind, to prepare for what is emerging, and to move with intention and care. Each week we will explore new herbs in connection with a theme, and learn a different traditional method to work with plants — combining practical knowledge with ritual, intuition, and a holistic view of health.
Through hands-on sessions, you will craft teas, tinctures, oils, oxymels, and herbal steam blends — each creation a chance to connect with the plants and build your own relationship with them, as well as a personal home apothecary. Week by week, you will take home remedies to support digestion, nervous system resilience, vitality, immunity, and renewal. All herbs and oils are carefully sourced, hand-harvested, or selected for the highest quality, bringing both potency and presence into your creations.

What to Expect Each Week

Week 1 - Inner Fire & Digestion
Thursday 26th February 2026 - 18:15 to 20:45
Theme: Warming the body, supporting digestion, awakening inner fire
As winter begins to soften, we start by tending the inner fire — the warmth and vitality that supports digestion, energy, and resilience. In this first session, we explore the digestive system through a seasonal lens, learning how bitter and warming herbs help us digest not only food, but also experiences and emotions.
We will work with a selection of roots and aromatic herbs traditionally used to stimulate digestion, improve assimilation, and gently restore energy during the colder months. Through tasting, smelling, and touching the plants, we’ll explore how bitterness awakens the body and why supporting digestion is often the foundation of herbal care.
Hands-on practice:
Together we will create a digestive bitter tincture — a classic herbal preparation to support digestion, appetite, and inner warmth. You’ll take home your own bottle to begin building your personal home apothecary.
You’ll leave with:
- A handcrafted digestive bitter tincture
- An understanding of how bitters support digestion and energy
- Printed notes on the herbs and method used, beginning your personal herbal booklet

Week 2 - Resilience & Nervous System
Thursday, 5th March 2026 - 18:15 to 20:45
Theme: Steadiness, adaptability, and nervous system support during seasonal change
As the season begins to shift from winter toward early spring, the nervous system often feels the transition before the mind does. In this session, we explore resilience not as hardness, but as the ability to remain steady, responsive, and supported as energy slowly starts to rise after winter.
We will work with a small selection of nourishing and calming herbs traditionally used to support the nervous system through times of change — including herbs that promote relaxation, emotional balance, and more restful sleep. By listening to the body and the plants, we’ll explore how to balance rest with readiness, allowing both softness and strength to coexist as we move toward spring.
Hands-on practice:
Together we will craft a nervous system tea blend, learning how to combine herbs for both effectiveness and enjoyment. While working with the same selection of herbs, each participant will create their own personalized blend, guided by both practical knowledge and intuition.
You’ll leave with:
- A handcrafted nervous system tea blend to support stress, rest, and sleep
- Insight into herbal support for adaptability, resilience, and nervous system balance
- Printed notes for your herbal booklet

Week 3 - Folklore, Ritual & Plant Spirit
Thursday, 12th March 2026 - 18:15 to 20:45
Theme: Thresholds, tradition, and intuitive connection with plants
At seasonal thresholds, humans have long turned to ritual, story, and plant allies to mark change and bring awareness to transitions. In this session, we explore herbal folklore and traditional practices connected to protection, renewal, and awakening — learning how people have worked with plants to navigate moments of change between seasons.
We will slow down and work intuitively with a small selection of plants rich in story and traditional use, exploring how herbs have been woven into rituals for the body, the home, and the spirit. This session invites sensory awareness, reflection, and a deepening of relationship with plants beyond their physical actions, as nature begins to stir toward spring.
Hands-on practice:
Together we will create herbal steam or bath blends, inspired by traditional practices and seasonal ritual. Participants can choose to craft a blend for facial steaming, full-body steaming, yoni steaming, or a herbal bath infusion, allowing space for personal intention and resonance.
These blends can be used as gentle rituals of cleansing, warmth, and transition — supporting both body and spirit during this in-between time of the year.
You’ll leave with:
- A handcrafted herbal steam or bath blend
- An understanding of traditional and ritual uses of herbs
- Printed notes on the plants, practices, and methods explored, added to your herbal booklet

Week 4 - Vitality & Immune Support
Thursday, 19th March 2026 - 18:15 to 20:45
Theme: Nourishment, protection, and rebuilding strength for the seasonal transition
As winter begins to loosen its grip, many of us feel both the pull toward new beginnings and the exhaustion left behind by the colder months. This in-between time can be surprisingly vulnerable — the body and mind are often drained, routines begin to shift, and it’s common to feel run down or catch seasonal illnesses just as energy starts to rise again.
In this session, we turn to plants as steady allies during this transition. We’ll explore herbs traditionally used to support vitality, strengthen the immune system, and gently protect the body while it regains strength. Rather than pushing or forcing energy, we focus on nourishment, warmth, and preparation — creating a supportive foundation for the months ahead.
Hands-on practice:
Together we will make an oxymel, a traditional herbal preparation of honey and vinegar. This method has long been used to support vitality and immunity in a gentle, daily way, offering both nourishment and protection during times of change.
You’ll leave with:
- Your own handcrafted oxymel
- Insight into herbal support for vitality, seasonal protection, and immune resilience
- Printed notes on the herbs and method, added to your growing herbal booklet

Week 5 - Renewal, Lymph & Seasonal Transition
Thursday, 26th March 2026 - 18:15 to 20:45
Theme: Flow, gentle clearing, and preparing for spring
In our final session, we focus on renewal — not as a dramatic cleanse, but as a gradual reawakening of movement, circulation, and flow. As early spring approaches, the body naturally begins to shift, seeking lightness and mobility after the stillness of winter.
We will explore herbs traditionally used to support the lymphatic system, circulation, and gentle cleansing, learning how plants can assist the body in moving stagnation while remaining nourished and supported. This session brings together knowledge and intuition cultivated over the course, encouraging trust in both the plants and the body’s natural rhythm.
Hands-on practice:
Together we will create an herbal massage oil, designed to support lymphatic flow and full-body circulation. You’ll learn how to apply it safely to help gently move and clear the body, while enjoying the warming and nourishing qualities of the plants.
You’ll leave with:
- Your own handcrafted herbal massage oil for lymphatic support
- Knowledge of herbs that support gentle cleansing and movement
- The final printed notes for your completed herbal booklet, rounding out your personal home apothecary
